B-well Garlic and Lemon Peri-Peri Sauce
 

B-Well Garlic and Lemon Peri-Peri Sauce

2 Red peppers, roasted and peeled
2 Onions, roasted and peeled
1 Garlic bulb, roasted
10 African birds eye chillies
10 Red chillies, dried
1 Tbsp Smoked paprika
1 tsp Paprika
1 Tbsp Oregano
1 tsp All spice
1 tsp Cumin
2 Lemons, zest and juice
50ml Apple cider vinegar
2 Tbsp Honey / Sugar
¼ Cup B-Well Simply garlic oil
¼ Cup B-Well Zesty lemon oil                
Salt and pepper
 
Place the peppers, onion, garlic and chillies in a food processor or blender. Blitz until well combined and chopped, it doesn’t have to be completely smooth at this point.
Add the Smoked Paprika, Paprika, Oregano, All Spice and Cumin. Blitz again to combine. Add the lemon, vinegar and honey. Blitz again. 
Slowly stream in the oil while blending to incorporate fully. Add a few more splashes if it is too thick.
Transfer sauce to a pan and cook out over a medium heat for roughly 20 minutes. This will help infuse all the flavours and soften the intensity of the chilli, without removing any flavour.
Allow to cool, then transfer to sterile containers and keep in the fridge for up to 2 weeks.
