B-well Lentil Salad

B-well Lentil Salad
Recipe from the B-well Happy Heart Cookbook
Serves 4

 Cooking time: 20 minutes


For the dressing
6 tbsp B-well Canola and Olive Oil
1 tsp ginger, minced
1 tsp Dijon mustard
1 tsp apple cider vinegar
1 lemon, juiced
Salt and pepper

For the salad
2 cups lentils, cooked 
3 beetroot, steamed and cubed
2 spring onions, finely sliced
3 tbsp walnuts / hazelnut, roughly chopped
1 cucumber, finely diced
2 tbsp parsley, chopped
2 tbsp mint, chopped
Pomegranate seeds and micro herbs to garnish 


For the dressing, place all the ingredients except the oil into a bowl, and mix well. 
While whisking gently, slowly stream in the B-well Canola and Olive Oil to create the dressing. Check seasoning, and set aside. 
For the salad, combine all the ingredients in a bowl, and mix together well. Add half the dressing, and mix again. Place in a large serving bowl, drizzle with the remaining dressing, and garnish with pomegranate seeds and micro herbs to finish!
