B-well Mayonnaise Diner Fries

B-well Mayonnaise Diner Fries

4 Potatoes, cut into chips
1l B-well Fry Well Oil
3 Onions, finely sliced
3 Garlic cloves, minced
1tbsp Thyme
2tbsp Brown Onion Soup Powder
4 tbsp B-well Creamy Gourmet Mayonnaise
1 tbsp Lemon Juice
1 tsp Onion and Garlic Powder
1 tsp Chopped Chives
1 cup Cheddar, grated
Finely sliced Spring Onion and Pickled Jalapenos to serve


Preheat your B-well Fry Well oil in a pot. Peel potato if desired and cut into desired size chip pieces.
Par-cook your chips until they are just soft enough to break, then remove and allow to steam for a few minutes. Place in oil and fry until golden brown and crispy.
While the chips are frying, add a splash of B-well Oil to a pan, then saute your onions, garlic and thyme until softened and translucent. Turn up the heat to caramelise the onions, then add the soup powder and stir through.
Add roughly ½ cup of water to your gravy to achieve desired thickness. Note, it will only be its final texture once the mixture has come to the boil.
Combine the B-well Creamy Gourmet Mayo, lemon juice, spices and chives to a bowl. Mix well and set aside.
To assemble, layer the plate with chips, followed by gravy, cheese and B-well Mayonnaise. Repeat the process until all the ingredients are used up. Top with a generous amount of cheese and bake in the oven until melted and gooey.
Remove and garnish with spring onion, pickled jalapenos and lashings of B-well Mayonnaise.
