B-well Meat Free Butter Chicken

B-well Meat Free Butter Chicken
Recipe from the B-well Happy Heart Cookbook
Serves 4

Cooking time: 1 hour


INGREDIENTS
1 cup yoghurt
½ lemon, juiced
4 cups soya pieces
2 tbsp B-well Canola and Olive Oil Blend 
2 onions, sliced
2 cups cauliflower, cut into florettes
1 tsp garam masala
1 tsp cardamom powder
1 tsp red chilli powder
1 tsp ginger, minced
3 garlic cloves, minced
½ tin tomato puree
1 can coconut cream
Fresh coriander and naan bread to serve
Salt and pepper

 

RECIPE INSTRUCTIONS
In a large bowl, mix the yoghurt and lemon juice with some salt and pepper. Add the soya pieces, and allow to marinate. Set aside. 
In a large pot, heat the B-well Canola and Olive Oil, and add the onions. Cook until brown. 
Add the spices, ginger, garlic and cauliflower. Stir until coated and combined, and cook for roughly 2 minutes. 
Add the yoghurt marinated soya pieces, stir to combine, cover with a lid and allow to simmer. 
Add the tomato puree and cook for 10 minutes. Add in the coconut cream with some salt and pepper, and allow to reduce and thicken slightly, roughly 10 minutes. 
Garnish with fresh coriander and serve with Naan bread.
