Barley Breakfast

Recipe Nicole Snelling

1 Cup Cooked barley
1 Onion, finely diced
100g Brown mushroom sliced
handful baby tomatoes
½ Cup Clover Amazi full cream
2 large egg
2 Tbsp olive oil
salt and pepper

In a medium heated non-strick pan, fry off the onions and mushrooms until softened, add the tomatoes and cook for 2-3minutes. Add the barley and amazi then heat through.
Place the mixture in a bowl and set aside.
Fry off the eggs in a non-stick pan until done to your liking. Place the eggs on top of the barley mixture, season and serve.
