Beef Fillet and Chimichurri Sauce Expresso

Beef Fillet and Chimichurri Sauce

150g Beef fillet, seasoned with salt & pepper on the braai for a minute and a half each side, rested for 3 minutes on a cooling rack for medium rare
 
Chimichurri Sauce
1/2 cup red wine vinegar
1 teaspoon kosher salt plus more
3-4 garlic cloves
1 shallot
1 Fresh green chilli deseeded
1/2 cup washed and picked coriander
1/4 cup washed and picked fresh flat-leaf parsley
2 tablespoons washed and picked fresh oregano
3/4 cup extra-virgin olive oil
 
Blend everything with a hand stick blender.
Check seasoning.
 
 
Marinade using a pestle & mortar)
Thyme or lemon thyme, small bunch
Rosemary, small bunch
Tied together with butcher string and made into a basting brush, after being bruised in the pestle & mortar.
Add: 60ml extra virg, in olive oil30ml balsamic vinegar
 
Brush generously onto steak throughout the time the time it’s on the braai.
 
 
Charred Corn & Fresh Mango Salad
2 corn on the cob prepared and ready for the braai
Quarter red cabbage finely sliced/shredded
30g finely sliced spring onions
Half a finally diced red pepper
100g fresh mango diced
Salt & pepper
30ml extra virgin olive oil
