Black Bun Burger with Onion Marmalade

Black bun burgers with onion marmalade

Recipe by Nicole Snelling

Makes 4

Black buns:
4 Cups Bread flour
1 ½ Cups Warm water
14-16g Squid ink
60ml Olive oil
1 Tbsp Sesame seeds
2 ½ tsp Dry active yeast
½ tsp Salt

Add the flour and salt to a large mixing bowl.
Add the squid ink to the water and stir well to dissolve the ink in the water, the add the yeast and allow the water to stand for 3-4 minutes to activate the yeast.
Pour the water and the olive oil into the flour and mix well to form the dough.
Remove the dough from the bowl onto a surface and knead for 5-6 minutes until the dough is nice and firm.
Place the dough into a grease clean bowl and cover with cling film. Allow the dough to rise until double its size, this will take 1-2 hours.
On a floured clean surface, divide the dough into 4 equal parts. Roll each part into perfect rounds and place them on a floured oven sheet pan, cover them again with a piece of greased cling film. Allow the buns to double in size before brushing them with some egg and a sprinkling of sesame seeds.
Place the buns into the oven to cook for 15-20 minutes, you will have to tap the buns to see if they are ready, if they sound hollow they are cooked through.
Allow the buns to cool completely before assembling the burgers.

Onion Marmalade:
1 Red Onion, sliced
2 Tbsp Sugar
3 Tbsp Balsamic vinegar
1 Tbsp Olive oil
1 Sprig Thyme

Bring a medium saucepan to medium-high heat, add olive oil and onion, cook for 10-15 minutes until caramelized and golden.
Add the balsamic vinegar, sugar, and thyme, cook for a further 5-7 minutes until the vinegar has dissolved and the onions become sticky. Remove the thyme stalk and put the onions aside to cool completely.

4 Beef burger patties
Wild Rocket
4 Slices Strong cheddar cheese

Cook the patties to your liking, then assemble the burger by placing the patty on the base of each roll. Add a slice of cheese, onion marmalade and top with wild rocket and serve your burger with your favorite sides of your choice.
