4 cups flour 1 tsp salt 1 tsp bicarbonate of soda 1 tsp baking powder 60g cold butter, cubed ¼ cup oat bran 1 cup grated cheddar cheese (plus extra for sprinkling) 1 large egg 1¾ cups buttermilk
Preheat oven to 180C. Whisk together the flour, salt, and bicarb and baking powder into a large mixing bowl. Rub in butter until mixture resembles breadcrumbs then mix in oat bran and cheese. Make a well in the center of the mixture then add egg and buttermilk. Mix together with a spoon until just combined. Divide dough into 4, then form into balls and place onto a greased tray. Cut a deep slit in the bread then sprinkle with cheese and bake for 15-20 minutes or until the bread is cooked through.
