Chicken kebabs
Recipe by Peter Ayub


500g Boneless chicken thighs, cut into chunks
150g Streaky Bacon
10-15 Dried apricots


6-9 Wooden skewers, soaked in water


Basting:
2 Tbsp Honey
4 Tbsp Soya sauce
The juice of 1 lemon


Place the basting ingredients into a mixing bowl, whisk until combined.
Thread the chicken chunks, bacon and dried apricots onto wooden skewers.
Over medium-hot coals, place the skewers to cook for 10-15 minutes. Remember to turn and brush the basting sauce over the chicken while it is cooking.
