Chocolate Hot Cross Bun and Butter Pudding Expresso

Chocolate Hot Cross Bun and Butter Pudding with Clover Classic Custard

4-5 Chocolate chip Hot cross buns (or traditional)
Clover Butter (enough to butter the buns with)
4 Large Eggs
2 Cups Clover fresh full cream Milk
40g Castor sugar
1 tsp Vanilla extract
Handful of Speckled egg candies
Clover classic custard for serving
Preheat the oven to 180°C
Warm milk in a pot over a gentle heat. Whisk the eggs, sugar and vanilla together in a large bowl, then gradually add the warm milk until well combined.
Cut the buns in half and spread with the butter, then using your hands tear and break them up roughly.
Arrange the torn up pieces in a large shallow ovenproof dish, then pour the egg mixture over and set aside to soak for +-15mins.
Press the buns down into the egg mixture as they soften, then scatter the speckled eggs over the buns.
Bake for 40-45mins or until set, then remove and allow to stand for 10mins to cool slightly before serving.
Serve pudding with Clover classic custard and enjoy!
