Clover Amasi Koeksisters

 Syrup 

1 kg sugar
1 litre water
1 cinnamon stick
1 Star anise
1tsp cream of tarter

Make this the day before. Cook all the ingredients in a large pot for 15 minutes. Remove rom the heat and keep in the fridge. The syrup needs to be really cold.


Koeksister Dough
2 cups Self-Raising Flour
1 cup Clover Amasi
Oil for frying

Mix the ingredients until a dough starts to form.
Roll out the dough to about 1cm thick on a dusted surface.
Cut the dough into rectangles of 6cm by 15 cm.
Cut each rectangle lengthways into 3 strips, leaving the one side un cut.
Plait the dough and seal the end.
Deep fry until golden before removing from the heat.
Drain the oil on a piece of paper towel and dip into the cold syrup.
