Clover Butro Oil Bobotie

2 Tbsp Clover Butro oil
2 Onions, finely diced
2 Bay leaves
1 tsp Garlic
2 Tbsp Curry powder
1 tsp Turmeric
500g Ground mince
1 tin Lentils, drained
2 Tbsp Chutney
1 Tbsp Apricot jam (optional)
1 Tbsp Worcestershire sauce
½ Cup Sultanas/raisins (optional)
Salt and pepper
2 Eggs
1 Cup Clover fresh milk
Preheat the oven to 180oC
Heat the Butro oil in large frying pan. Add the onions and cook until translucent. Add the pay leaves, garlic, curry powder and turmeric. Cook for 5-7 minutes on a low temperature. Add the mince and cook for 15 minutes. Add the chutney, jam and Worcester sauce and cook for 5 minutes. Fold in the lentils, sultanas/raisins and season to taste. Pour the mixture in a deep oven proof dish and set aside.
Combine the eggs and milk until well combined, season to taste. Pour over the mince mixture and cook for15-20 minutes, until the egg is cooked and golden. Serve and enjoy!
