Clover Cheesy Blooming Onion

Recipe by Nicole Snelling

For the onion:
1 Large white onion
1 ½ Cups Flour
1 tsp Paprika
1 tsp Garlic powder
½ tsp Chilli powder
½ tsp Salt
2 Eggs, beaten
¼ Cup Clover milk
Oil for deep frying

Bring the oil to a medium-high heat, make sure its enough oil for the whole onion to be covered.
Peel the onion and cut off the top tip, make sure to pull off any excess dried roots and rinse the onion well.
With the root facing downwards towards the chopping board, cut the onion into 4, without cutting all the way through, make sure to leave a cm gap from the root.
Then cut each quarter into thirds, to create equal sized petals.
Separate the petals from one another to create a flower.
Place the flour, spices and salt into a large mixing bowl and mix well to combine.
Sprinkle the flour mixture over the onion and in-between the petals, remove any excess.
Add the eggs and milk to a bowl and dip the onion into the egg mixture, make sure to spoon the egg mixture in-between the petals before coating them with another layer of the flour mixture.
Carefully place the onion, petal side facing down, into the oil and allow to deep fry for 3-4 minutes. Turn the onion over to allow to fry on the other side for another 2-3 minutes. The onion must be golden brown in colour.
Remove the onion from the oil and place onto some paper towel to soak up any excess oil.
Serve the onion with the cheese sauce.

Cheese sauce:
¾ Cup Clover Mature cheddar cheese, grated
½ Cup Clover Fresh full cream milk
½ Tbsp Flour
½ Tbsp Butter
Salt and pepper, to taste

To make the cheese sauce, place the butter in a sauce pot and melt over a medium heat.
When the butter has melted, mix in the flour to make a smooth paste. Cook it for 1 minute.
Whisk in the milk slowly, making sure there are no lumps.
Simmer the sauce for 10 minutes, until thickened, remove from the heat.
Stir in the cheese and mix until all the cheese has melted and season well with salt and pepper.
