Clover Cheesy Chicken Liver

Clover Cheesy Chicken Livers

500g Chicken Livers, fresh and cleaned
1 Tbsp Olive Pride
3 Garlic cloves, finely chopped
1 Onion, finely chopped
1 tsp Oregano
1 tsp Smoked paprika
1 tsp Cayenne
400g Chopped tomatoes
1 tsp Sugar
1 tsp Apple cider vinegar
Salt and pepper


4 Slices Ciabatta
1 Tbsp wholegrain mustard
2 Tbsp Clover Cream O'Naise
125ml Clover Mature Cheddar
125ml Clover Mozzarella
1 Tbsp Butter
Salt and pepper


In a hot pan, place oil and fry chicken livers on each side until golden and caramelized.
Remove from pan and set aside.
In the same pan, add garlic, onion and spices and cook until onions are translucent.
Add tomato, sugar and vinegar, stir, and cook for 15 minutes until slightly thickened
Add livers and bring to a boil, then simmer for a further 5 minutes.
Taste and adjust
seasoning according to your taste.
Combine mustard and Cream O'naise in a bowl, then spread onto ciabatta slices evenly.
Mix cheese together in a bowl and split over 2 slices of bread.
Close sandwiches, place in a medium heat pan and fry with butter until golden
brown and oozing cheese.
Cut sandwiches in 2, serve with the livers and eat immediately.
