Clover Chicken Braised in Soy milk medjool date salsa

Chicken braised in soy milk with medjool date salsa
 
Recipe by Monicia Horne
 
For the braised chicken:
1 Pack chicken thighs
2 Tbsp Oil
1 Onion, finely chopped
2 Garlic cloves, finely chopped
2 Bay leaves
Pinch of saffron strands
500ml Clover Soy milk
Salt and pepper for tasting
 
For the date salsa:
100g Medjool dates, pits removed and chopped
30ml Olive Oil
2 tsp Red wine vinegar
 
Heat the oil in a frying pan and brown the chicken pieces.
Remove from the pan and add in chopped onions. Once translucent, add the chopped garlic, bay leaves, saffron and Clover Soy milk. Cook for 2-3 minutes.
Add the chicken to the Soy milk sauce and season with salt and pepper.
Allow to cook until chicken is tender.
For the date salsa, combine all the ingredients together and serve with the chicken.
