Clover Feta and Broccoli Pesto Pasta
 
1 head broccoli, broken into florets
2 cloves garlic, chopped
zest and juice of 1 lemon
2  discs Clover feta Herb flavour
¼ cup Olive Pride EVOO
salt and pepper
1 pack cooked pasta
fresh herbs for garnish
 
Bring a pot of  salted water to a boil. Cook the broccoli by blanching it: Add it to the boiling water, cook for a few minutes, drain then add the broccoli to a bowl of cold, icy water. Reserve some florets of broccoli for serving
 
Drain the water then add the cooled broccoli to a blender with the garlic, juice and zest of lemon, feta and extra virgin olive oil. Blend to your liking (smooth or slightly chunky).
Stir the pesto through the cooked pasta until well coated. Drizzle more Olive oil and crumble more feta over the top.
 
Garnish with reserved broccoli florets, crumbled feta and fresh,chopped herbs.
