Clover Nolac Creamy Chicken & Sweet Potato Soup Expresso

Clover Nolac Creamy Chicken & Sweet Potato Soup

4 cups Chicken stock
500g Sweet potatoes, peeled and cubed
1 Onion, diced
250g Chicken breast fillet, cut into 1cm cubed
1 cup Clover Nolac milk
1 Garlic clove, peeled
1 Tbsp Roasted Masala
2 tsp Cumin powder
½ tsp Smoked paprika
handful fresh coriander
1 Tbsp Olive oil
Heat the olive oil in a large, sauté the onions until golden. Pour the chicken stock into the pot and bring to a boil, add the sweet potatoes, garlic, masala, cumin, paprika and coriander. Cover and allow to simmer until the sweet potatoes are cooked through (about 10-15 min).
Remove from the heat and allow to cool slightly. Using a hand-stick blender, blend the soup until smooth.
Place the pot back onto the heat, add the chicken and milk to the soup and cook for a further 4-5 minutes until the chicken is cooked.
Season and serve with your favourite freshly baked bread or top with croutons.
