Clover Olive Pride Green Thai curry

Clover Olive Pride Green Thai curry 

For the curry paste
1 tbsp Olive Pride Blend 
2 green Thai chillies
1 shallot, roughly chopped
1 garlic cloves, chopped
thumb size ginger, roughly chopped
1 lemongrass stalk
1 tbsp brown sugar
1 tsp tumeric
juice and zest of 1 lime
handful fresh coriander leaves

Blits together in a blender to make a paste 

To make the curry 
2 tbsp Olive Pride Blend
1 shallot or small onion, sliced
1 tbsp ground cumin
Curry paste
1 tin coconut milk
2 zucchini, sliced
100g brocolli florets
100g Swiss chard spinach, roughly chopped
Handful fresh basil leaves
Salt and pepper to tate

To make the curry, heat the Olive Pride Blend in a large saucepan. Add the sliced shallot or onion and a pinch of salt. Saute until translucent. Next add the cumin and the curry paste and cook for a minute or 2.
