Clover Tropika Pineapple Ice Lollies

Recipe by Josh Wiid

150ml Tropika Pineapple
150ml Pineapple, chopped
100ml Coconut cream
100ml Clover Classic Plain
1 Lime, juiced and zested
2 Tbsp Honey

Place pineapple in a blender, begin blending and slowly stream in Tropika until athick puree is formed. 
Set aside. 
Strain through a sieve if you prefer a smoother, fibreless texture.
Combine coconut cream, Clover Classic, lime and honey. 
Mix together and taste. 
If too sour or bland, add another tablespoon of honey. 
Stir to combine and set aside.
Fill ice lolly moulds to one third with pineapple mixture, followed by one third of
coconut mix, then finish remaining third with pineapple mixture.
Gently stir each lolly with a skewer stick to achieve marbled effect. 
Place into freezer immediately and allow to set overnight.
Once frozen, remove from moulds and enjoy.
