Clover Ultimate 5 Ingredient Cheese Sauce
 

Recipe by Josh Wiid 


50g Clover Butter, cubed
50g Cake flour
500ml Clover Fresh Full Cream Milk
200g Clover Mature Cheddar and Tussers, grated and mixed
25ml Wholegrain mustard
Salt


Melt the butter in a saucepan, then add the flour and stir to incorporate. 
Cook for a further 2-3 minutes until the mixture starts to bubble gently and become slightly
darker.
On a medium heat, slowly stream the Clover Fresh Full Cream Milk into the flour mix while whisking.
Add the milk in 1/3’s to avoid excess lumps. 
Once all milk has been incorporated, bring to a boil gently. 
Once a white sauce / cheese sauce has boiled, that is an indicator of how thick the end product will be.
On a low heat, slowly add cheese in small handfuls to avoid the sauce splitting. 
Stir to incorporate and melt through.
Add mustard, stir through and taste. 
Add salt to your taste preference.
Remove from heat and enjoy immediately. 
Can be stored in the fridge for up to 3 days and in the freezer for 2 months.


Chefs tips and variations:
Once a white sauce / cheese sauce has boiled, that is an indicator of how thick the end
product will be.
There are countless flavour variations to elevate your cheese sauce to the next level. 
Here are 3 winners guaranteed to make you and your food happy:
Pepper Sauce – simply add 1 small tin of roughly chopped peppercorns in brine, and
a few grinds of fresh black pepper. Steaks will never be the same again.
Mushroom Sauce – Slice 1 punnet of mushrooms, fry with grated garlic and add to
your cheese sauce base. Burgers will become your best friend.
Jalapeño Sauce – For a spicier finish, add 2 tablespoons of chopped pickled Jalapeño
