DEFY Pressure Cooker BBQ Sticky Lamb Ribs Expresso

DEFY Pressure Cooker BBQ Sticky Lamb Ribs

2 kg Lamb ribs
1 onion, finely chopped
¾ cup Honey
½ Cup Apple cider vinegar
½ Cup Beef stock
3 Tbsp Worcestershire sauce
2 Tbsp tomato paste
1 Tbsp ground cumin
1 Tbsp ground coriander
2 tsp smoked paprika
Salt and pepper
Place the onion, honey, apple cider vinegar, beef stock, Worcestershire sauce, tomato paste, cumin, coriander, smoked paprika into the pressure cooker, using a silicone spatula, mix all the ingredients to combine.
Season the lamb ribs, place into the pressure cooker and coat well with the liquid.
Close the lid, ensure the exhaust valve is in on the correct setting.
Select Auto cook function Meat/Chicken, the time and pressure level will automatically illuminate on standard, pressure will start building up for approximately 10-15 minutes.
Once the pressure has built up, the cooking time will display on the screen, once the cooking time has been completed an alarm will sound and unit will go into keep warm state.
Then to release the pressure, slide the exhaust valve to the left or right and allow the pressure to escape.
Hold the lid handle firmly and turn it anti-clockwise.
Remove the ribs from the pressure cooker and place onto a baking tray.
Pour the liquid into a sauce pot and allow for it to reduce.
In a preheated oven of 200°C, baste the ribs with the barbecue sauce and place into the oven to caramelise and get sticky, then serve.
