Breakfast burger

Expresso Breakfast Burger

Serves 4

This burger is inspired by a full English breakfast. Instead of having the individual components of an English breakfast, I’ve decided to put it all inside and between two burger buns and make the ultimate breakfast burger.


125g bacon, cooked, cooled and chopped

10 mushrooms, chopped and sautéed

500g beef mince

Salt and pepper

2 Tbs fresh Thyme, chopped

4 Parmalat cheddar cheese slices


Tomato relish:

250g Cherry tomatoes

1 Garlic clove, crushed

2Tbs Balsamic vinegar

1 Tbs brown sugar


2 eggs

100ml Parmalat cream

Salt and pepper

4 burger buns


To serve:

4 Parmalat cheddar cheese slices


  1. Mix together chopped bacon and mushrooms then set aside.
  2. Mix together mince, seasoning and thyme then separate into 8 patties.
  3. Place a cheese slice onto 4 of the patties then a spoonful of the bacon and mushroom mixture.
  4. Top with another meat patty and seal the sides to encase the filling.
  5. Heat a griddle pan, drizzle the burgers with olive oil then grill on both sides.
  6. Place the cherry tomatoes, garlic, balsamic and brown sugar in a pan and simmer gently until tomatoes start to burst and soften.
  7. Beat together eggs, cream and seasoning.
  8. Cut burger buns in half, then dip the cut sides into the egg mixture and place into a hot pan to cook the eggy side.
  9. Assemble the burger by placing half the burger bun on a plate, top with a cheese slice then the burger patty. Top with a generous spoonful of tomato relish then finish with the other half of the bun.
  10. Serve with a hot cup of coffee to complete the breakfast.
