Fermented Tomato Sauce

Fermented Tomato Sauce

175ml Tomato Paste
2 Tbsp Starter liquid (Sauerkraut Juice / Water Kefir / Whey)
1 Tbsp Honey
1 Garlic Clove, minced
½ tsp Salt
½ tsp Cinnamon, ground
¼ tsp Cloves, ground
¼ tsp Cayenne pepper
2 Tbsp Apple cider vinegar
500ml Glass Jar


In a large bowl or sterile jar, add and combine the tomato paste, starter liquid and honey. Mix, then add garlic, salt, cinnamon, cloves and cayenne pepper. Mix until everything is combined and incorporated.
Pour the sauce into a sterile jar, then add the Apple cider vinegar carefully, pouring onto the surface of the sauce. This will help stop any mould from potentially forming on top.
Cover tightly with a lid and leave to sit at room temperature for roughly 2-3 days. Ensure that it is kept out of direct sunlight.
Once you are happy with the level of Fermentation, mix the surface layer of vinegar into the sauce. If too thick, regulate the consistency by adding more vinegar / starter liquid or water.
Place in the fridge and enjoy, expect the sauce to last up to 2 weeks.
