Five Roses Ruby Orange and Thyme Ice Tea

Five Roses Ruby Orange and Thyme Iced Tea
Makes 1L

4 Five Roses Ruby Orange teabags
1 L Boiling water
1 Grapefruit
1 Orange, segmented
3-4 Sprigs fresh thyme, plus extra for garnishing
3 Tbsp Honey
Handful ice

Place the orange segments into the freezer to freeze overnight.
Using a vegetable peeler, peel the skin from the grapefruit, set aside, slice the grapefruit in half and juice, then add the juice to a large jug.
Add the boiling water to a large heat resistant jug, add Five Roses Ruby Orange teabags, thyme, and grapefruit skin and allow to steep for 3-4 minutes. 
Remove the tea bags, add the honey and allow the tea to cool completely.
Place the frozen orange segments into a plastic zipper bag and crush them until the individual juice sac split apart with a rolling pin.
Add ice to serving glasses, pour the chilled iced tea into each glass and top off with orange icicles and a fresh thyme sprig.
