Garlic Lemon Butter Snoek Expresso

Garlic Lemon Butter Snoek
Recipe by Nicole Snelling
1 fresh snoek, cleaned, head and fins removed
½ cup Butter
4-5 Cloves garlic, finely chopped
2 lemons, juiced
1 Tbsp Apricot jam
1 Small chilli, finely chopped
Handful fennel
Salt and pepper for seasoning
Place a small sauce pan over the coals, add all the ingredients, excluding the snoek and bring it to a light simmer until the butter has melted.
Rub a little oil on the skin side of the snoek to ensure that it does not stick to the grid.
Place the snoek skin side down onto the braai grid, allow it to cook for 15 min, while you bast the fish, using a basting brush, every 2min.
Test the snoek by inserting a fork or a knife in the thickest part, if it flakes the snoek is cooked
Season with salt and pepper and serve!
