Grilled plums served with Yoghurt and Caramelized Nuts

Grilled plums served with Yoghurt and Caramelized Nuts

Serves 4


Recipe by Zola Nene


6 plums
4 Tbs maple syrup
Juice of ½ orange


For the caramelized nuts:
¼ cup sugar
Juice of ½ an orange
100g mixed nuts


Yoghurt to serve


Halve the plums, then remove the pit.
Drizzle the plums with maple syrup and orange juice, then toss to coat the plums.
Place the plums cut side down onto a hot griddle or on a braai, then cook until charred before turning over to char on the underside.
Remove from the heat, drizzle with any leftover maple juices and set aside.
To a cold pan add the sugar and the orange juice, then place on a gentle heat until sugar dissolves. Boil until a light golden caramel forms, then quickly stir in the mixed nuts.
Transfer mixture to a greased metal tray to cool.
To serve, Place three plum halves onto a plate, then top with a dollop of yoghurt.
Roughly chop the caramelized nuts, then sprinkle onto the plums and yoghurt.
