Healthy Fruit Cake Expresso

Healthy Fruit Cake
Recipe by Amy Hopkins
100g dates, chopped
100g Turkish apricots, chopped
100g dried figs, chopped
100g golden sultanas
100g raisins
100g currents
100g walnuts, roughly chopped
1 tsp cinnamon
½ tsp nutmeg
1 tsp vanilla extract
Juice and zest of 1 orange
3 tbsp coconut oil (melted), plus extra for greasing
4 large free-range eggs
¼ Cup Clover Full cream milk
¼ Cup Clover Amazi
200g almond flour
Preheat oven to 150C.
In a bowl, mix first 12 ingredients together until combined.
Crack eggs into a separate bowl and beat until fluffy, add the milk and amazi. Pour into the fruit mixture and gently combine.
Mix in almond flour – the mixture will be very thick.
Grease and line a 20cm spring-form cake tin with baking paper. Spoon mixture into the tin and level it out with a spatula. Cover the top of the cake tin with foil. Bake for 75 to 90 minutes. Insert a cake tester into the cake, if it comes out clean, the cake is ready.
Remove cake and allow to cool.
