Hearty Chicken Soup

Hearty Chicken Soup
 

Recipe by Melandie Esterhuizen

1 Tbsp Olive Oil
1 Onion, diced
500g Chicken breast, cut in cubes
3 Cloves Garlic, Chopped
1 Cup Celery, sliced
1 Cup Carrots, peeled and thinly sliced
1 Cup Green Beans, chopped
2 Springs Fresh oregano
2 Springs Fresh basil
¼ tsp Nutmeg
1 tsp Thyme
900ml Vegetable stock
1 Cup Lite Coconut milk
2 Cups frozen green peas
¼ tsp black pepper

Tie the Oregano, basil and thyme together with a small piece of twine.
In a large pot fry the onion in the olive oil. 
Add the chicken and allow to brown.
Add the Garlic, Celery, Carrots, Green Beans, Fresh Oregano, Fresh Basil, Nutmeg and fresh Thyme and allow to cook for 5 minutes.
Add the vegetable stock and cream and let that thicken. 
Add the Frozen peas and cook for 7 minutes. 
Remove from the heat and season with black pepper.
Serve Warm.
