Homemade Cottage Cheese

1/4 cup lemon juice
¼ cup cream
½ tsp salt
Pour milk into a large heavy pot and bring to the boil.
Remove from heat, pour in lemon juice and stir. Cover and let rest for 30 minutes.
Strain through muslin cloth to remove liquids.
Squeeze out all excess liquid then tie up the cloth.
Run cold water over the cloth for three minutes, kneading and squeezing the cheese curds the whole time.
Transfer the curds to a bowl and add the cream, along with 1/2 teaspoon salt.
Use cheese as desired
For a sweet cheese topping:
250g cottage cheese
Zest of 1 lemon
Honey to taste
Combine ingredients then use to top a slice of bread.
For a savoury cheese topping:
1 Tbs chopped fresh thyme
2 Tbs grated parmesan
Salt and pepper
Mix together the cheese, thyme and parmesan.
Spread the cheese onto the bread then top with sliced tomatoes
