Homemade Marzipan Expresso

Homemade Marzipan

Recipe by Zola Nene

200g ground almonds
200g icing sugar
1 tsp almond essence
1 egg white
Place the ground almonds and icing sugar in a food processor and pulse until combined.
Add the almond extract and pulse to distribute.
Add the egg white and blend until a thick dough is formed.
Turn the almond marzipan out onto a work surface and knead it a few times, adding more icing sugar if the mixture is too sticky.
Wrap it up in plastic wrap and refrigerate until ready to use.
