Hot Wings With Blue Cheese Dip Expresso

Hot wings with a blue cheese dip
Serves a crowd!
Recipe by Teresa Ulyate
For the blue cheese dip:
100g blue cheese
175ml sour cream
2 Tbsp mayonnaise
¼ tsp crushed garlic
salt and pepper
For the basting sauce:
2 tsp olive oil
½  an Onion, finely chopped
½ tsp Cayene pepper
½ tsp Paprika
1 tsp crushed Garlic
1 Chilli, finely chopped
400g Tin peeled and chopped tomatoes
1⁄4 cup Water
salt and pepper
1kg Chicken wings
1.) Start with the dip.
Place the blue cheese in a small mixing bowl and mash with a fork. Add the remaining ingredients and mix well until most of the lumps have been incorporated.
Season with salt and pepper and refrigerate while you prepare the chicken.
2.) To make the sauce heat the olive oil in a frying pan over a medium heat. Add the onion, cayenne pepper, paprika, garlic and chilli and stir for a minute. Add the tomatoes and water. Season with salt and pepper. Stir and allow to simmer for 15 minutes until thickened. Check the seasoning.
3.) Leave the sauce to cool slightly, then blitz with a stick blender.
4.) Trim the tips off the chicken wings. Cut each wing in half at the joint. Brush the chicken with some of the spicy tomato sauce.
5.) Cook the chicken wings over the hot coals until crispy and cooked through. While the chicken is cooking gently heat the remaining sauce in the microwave or on the stove.
6.) Place the cooked chicken wings straight into the warmed sauce. Toss well, then transfer to a warmed serving plate. Serve immediately with the blue cheese dip.
