Jungle Oats Cinnamon Granola and Apple Bars Expresso

Jungle Oats Cinnamon Granola and Apple Bars

2 cups Jungle Muesli Cinnamon Granola
¼ cup Jungle Oats
½ cup Pecan Nuts, chopped and toasted
3 Tbsp. Coconut Oil
¼ cup Honey
4 Dates, pitted and blitzed in a blender until sticky
1 Vanilla Pod, seeds scraped out
1 cup Dried Apples, chopped
A pinch of salt


Preheat oven to 180 deg cel.

Spread oats onto a baking tray and pop it into the oven.

Bake for about 5 minutes until the oats becomes fragrant.

In a saucepan, add the honey, coconut oil, date pulp and vanilla seeds then bring to a gentle simmer over a medium heat.

Set aside.

In a bowl, mix together the Jungle Muesli Cinnamon Granola, dried apples, pecan nuts and salt.

Add the Jungle Oats and honey mixture and stir until everything is properly combined.

Line a square dish with baking paper.

Press the granola mixture into the dish, then cover with another sheet of paper.

Press down firmly to pack it down.

Pop the dish into the fridge to chill for about an hour.

Cut into snack bars and store in an airtight container.

Serve at room temperature.
