Kadhai Aloo Palak

Recipe by Vanie Padayachee

1kg Spinach blanched and pureed till a smooth paste
100ml Oil
6 Red dried chilies
1 tsp Cumin seeds
2 Tbsp Chopped garlic
5cm Piece ginger julienne
2 Potatoes cut into cubes and par boiled or fried
½ tsp Cumin power
½tsp Coriander powder
1 Tomato concasse
Fresh coriander

Heat a frying pan; add on the oil
Sauté the chillies, cumin seeds, garlic till just brown
Add the onion and julienne ginger and sauté till just soft
Add the ground spices and spinach puree and sauté for 5 minutes till liquid had evaporated.
Check salt
Add the blanched aloo and mix well
Finish off with tomato concasse and fresh chopped coriander and a squeeze of lemon juice.
