Cheesy Thyme Muffins Expresso

Kellogg’s Special K Cheesy Thyme Muffins

Recipe by Peter Ayub
300 g self-raising cake flour
100 g Crushed Kellogg’s Special K
100 g brown sugar
1 teaspoon salt
½ cup of crumbled feta cheese
¼ red onion finely chopped
1 cup of strong cheddar cheese grated
1 tablespoon of finely chopped fresh thyme
1 teaspoon baking powder
A pinch of Bicarbonate soda
75 g salted butter
2 large free-range eggs
250ml plain yoghurt or buttermilk (I prefer using buttermilk)
Handful of grated strong cheddar for top of the muffins
Handful of crushed Special K for the top of the muffins  
Place the Special K, flour, sugar, salt, baking powder, thyme and bicarbonate of soda in a mixing bowl.
Rub in the butter
Add feta, red onion & cheddar cheese
Mix the eggs & yoghurt together – add to muffin mixture and combine everything nicely! Don’t over mix.
Spoon the mixture the into each paper cup in the muffin tin. Spray & Cook the paper muffin holders and the muffin tray
Sprinkle the extra crushed Special K and extra Cheddar on top of the muffins
Bake in a preheated oven at 190 °C for 30 min to 35 min until golden brown
To check if ready, press the centre and it should bounce back and slide a tooth pick in the centre and it should come out clean
