McCain loaded sweet potato fries

McCain loaded sweet potato fries
Recipe by Nicole Snelling 
Serves 4-6
Preparation time: 30 min
Cooking Time: 20 min


Ingredients:
750g McCain Crispy Rosemary & Garlic Sweet Potato Fires
1 cup McCain Sweetcorn, grilled
2 avocados, peeled & cored 
2 spring onions, finely sliced
1 whole red pepper, roasted, deseeded & sliced
1 tomato
1 lime 
1 red chilli, finely chopped 
2 tsp oregano 
1 tsp paprika
Handful fresh coriander, roughly chopped
salt & pepper, to taste 
 
Cooking instructions:
Pre-heat the oven to 180C.
Spread your McCain Crispy Rosemary & Garlic Sweet Potato Fries evenly in a single layer on a baking tray. Evenly sprinkle the oregano and paprika over the sweet potato fries.
Bake for 15-20 minutes, turning occasionally until crispy.
Season well with salt and pepper, add your fries to a serving platter and top with grilled corn kernels, roasted red pepper slices, guacamole and fresh salsa.


To make the guacamole:
Place the avocado into a mixing bowl, add the zest and juice of one lime, season with salt and pepper. 
Using the back of a fork, roughly mash up the avocado making sure to not over mix it. Keep it chunky.


To make the fresh salsa:
Dice up the tomato into small cubes, add the spring onion, coriander, chilli and season with salt and pepper.
