Muesli Rusks Expresso
Muesli Rusks

Recipe by Zola Nene

4 cups cake flour
1 tsp baking powder
1/2 tsp Salt
¾ cup Selati Muscovado sugar
250g Butter, diced
200g Muesli
2 Eggs
1 ½ cups buttermilk

Preheat oven to 180 C
Grease and line two loaf tins.
Mix together the flour, salt, baking powder and sugar into a large bowl.
Rub in the butter until breadcrumb consistency then stir in the muesli.
Beat together the eggs and buttermilk then mix into the dry ingredients.
Divide the mixture between the two loaf tins then bake for about 45 minutes or until golden and a skewer comes out clean.
Remove from the oven and slice into rusks.
Turn the oven down to 90C.
Place the cut pieces onto flat baking trays and place into the oven to dry out – this will take between 4 - 6 hours depending on the size of the rusks.
Store in an air-tight container.
