Nespresso coffee braised pulled pork buns

Ingredients
+-1 kg Boneless pork shoulder
1L Vegetable stock ½ Cup Smokey Barbecue sauce
2 Espresso shots of Nespresso Master Origins Indonesia
4 Tbsp Honey
1 ½ Tbsp smoked paprika
2 tsp cumin powder
Salt and pepper, to taste
 
Toasted buns, for serving
Coleslaw for serving
 
Cooking instructions
Preheat the oven to 160°C
Place the pork shoulder into an oven proof deep dish and rub the outside with some smoked paprika, cumin and salt. Add the vegetable stock and coffee shots to the dish, cover with a lid or some foil. Place the dish into the oven to cook for 4-5 hours, or until the meat is tender and starts to pull apart. Strain the liquid from the pork, keeping ½ cup aside. Using two forks, shred the pork meat.
Then add the reserved stock back to the dish, add the barbeque sauce and honey, season with salt and pepper, then place back into the oven, uncovered for 5-8 minutes to get nice and sticky.
Serve the pulled pork on freshly toasted buns, topped with coleslaw.
