Nutty Special K Bars with Dark Chocolate Drizzle:

Ingredients:
- 150 g mixed nuts
- 2 cups Special K, crushed/processed to a volume of about 1 cup
- 1 cup oats
- ½ cup sunflower seeds
- 2/3 cup dried cranberries (make sure they don’t stick together)
- ½ t ground cinnamon
- Pinch of ground nutmeg
- Pinch of salt
- 2 ripe bananas, mashed with a fork
- 1/3 cup honey
- 40-80 g dark chocolate, melted
Method:
- Pre-heat oven to 180 C.
- Spread nuts out on a baking tray, then toast for 10 min in the oven. Remove from oven, then chop roughly.
- In a large mixing bowl, add toasted chopped nuts, crushed Special K, oats, sunflower seeds, cranberries, cinnamon, nutmeg and pinch of salt. Mix well.
- In a small mixing bowl, mix mashed bananas with honey. Then add to Special K mixture and mix well.
- Spread mixture out into a 23cm square, lined baking tin and smooth the surface with wet hands. Bake for 15 minutes at 180 C.
- Remove from oven and cool completely (at least 1 hour). Remove uncut slab with lining onto a wooden cutting board, and cut into bars.
- Drizzle bars diagonally with melted dark chocolate. Serve immediately or store in an airtight container in the fridge for up to a week.
