Peanut Butter and Banana Breakfast Bites
2 ½ C Whole Wheat Flour ½ C Kellogg’s All-Bran Instant Porridge ½ C brown sugar 2 tsp baking powder ¾ tsp salt ¾ C smooth or crunchy peanut butter 2 eggs 1 tsp vanilla extract ¾ C low-fat milk 1 C chopped bananas Extra milk for brushing Kellogg’s All-Bran Flakes to sprinkle on top
Preheat the oven to 180°C. Lightly grease a baking tray or line with baking paper. In a large bowl whisk together the whole wheat flour, Kellogg’s® All-Bran® Instant Porridge, brown sugar, baking powder and salt. Make sure the ingredients are evenly mixed. In a medium sized bowl combine the peanut butter, eggs, vanilla extract and low fat milk. Mix with an electric mixer on a medium speed until they are well blended. Gently stir the peanut butter mixture into the dry mixture until just combined. Then gently stir in the bananas. On a lightly floured surface knead the mixture twice and gently flatten the mixture out so it is about 2.5 cm thick. Using a biscuit cutter, cut the breakfast bites out and arrange them on the baking tray, leaving a 2 cm gap between each bite. Brush the breakfast bites with milk, sprinkle Kellogg’s® All-Bran Flakes® on top of each bite and bake for 25 minutes or until the skewer comes out clean. Cool on a wire rack. Serve with jam (optional). Store in an air-tight container.
