Pear, Cinnamon Oat Pudding with Jungle Oatso Easy Expresso

Pear, cinnamon oat pudding
Recipe by Zola Nene
Serves 6

4 pears, peeled and chopped
1 tsp ground cinnamon
112g butter, softened
112g castor sugar
2 large eggs
1 tsp vanilla extract
65g flour, sifted
50g Jungle Oatso Easy – Apple and Cinnamon
1 tsp baking powder

Preheat oven to 180C.
Grease a rectangular oven dish.
Toss together the pears and cinnamon, then place into the oven dish.
Beat together the butter and the sugar until light and fluffy.
Add the eggs, one at a time, beating well after each addition.
Beat in the vanilla extract.
Add the flour, Jungle Oatso Easy and baking powder, then mix well until combined.
Dollop spoonful’s of the batter onto the pears then bake for about 25-30 minutes or until the batter is cooked through and golden.
Serve with warm custard.
