Ricotta Waffles With Vanilla Roasted Strawberries
Makes 12
Ingredients:
- 1 x 500g Sasko Quick Treats Flapjack mix
- 2 Tbs sugar
- 2 Tbs melted butter
- 550ml buttermilk
- 3 eggs, separated
- Zest of 1 lemon
- 100g ricotta cheese
- Vanilla roasted strawberries
- 250g strawberries, hulled and halved
- 2T butter
- 1T balsamic vinegar
- 2-3T vanilla sugar
Method:
STEP 1: Place the flapjack mix, sugar, melted butter, buttermilk, egg yolks and lemon zest in a bowl and mix to combine.
STEP 2: Whisk the egg white until stiff peaks form and fold through the flapjack mix with the ricotta cheese.
STEP 3: Heat a waffle iron or a large non-stick frying pan and fry the batter in batches until puffed and golden.
STEP 4: For the strawberries, toss all the ingredients together and roast in the oven at 200C for 10-12 minutes.
TIP: Make your own vanilla sugar by placing a split vanilla pod in a jar of sugar and leaving to infuse for a few days.
