Sasko Chocolate chip skillet cookies

Sasko Chocolate chip skillet cookies

Recipe by Anel Potgieter

1 cup butter, at room temperature
1 cup brown sugar
1/2 cup caster sugar
2 free range eggs
1t vanilla extract or paste
2 cups Sasko cake flour
1t baking powder
1/2 fine/table salt
1 cup milk chocolate chips
1 dark chocolate chips
1T good quality cocoa
1T icing sugar
Sweetened and whipped cream to serve

Add the butter to a mixing bowl along with the brown and caster sugar before whipping together until pale and voluminous, this is called a creaking method. Continue mixing the butter into the into until you can hardly feel the sugar crystals.
After creaming the butter and sugar add the eggs and vanilla to the mixing bowl and mix well to combine.

Add the flour, baking powder and salt to the mixture and mix through to form a rough cookie dough. Sprinkle in the chocolate chips and fold into the dough before pressing the dough into a greased cast iron pan.

Preheat the oven to 160C. Place the pan in the oven to bake for 25-30 minutes or until the tops have turned golden and the ends are slightly crisp, always remember that the cookie will firm more once it cools slightly.

Serve the cookie in the pan topped with a dusting of cocoa and icing sugar and a generous helping of whipped cream
