Strawberry Camel Milk Ice Cream Expresso

Strawberry Camel Milk Ice Cream

500g Strawberries
3 cups Camel Milk - we will have to fake this with cream
1/2 cup sugar
Pinch of salt
Place washed and trimmed strawberries in a blender and pulse until they are blended but still somewhat chunky. Put in the fridge to chill.
Combine milk, pinch of salt and sugar in a medium saucepan or pot over a medium heat, stir until sugar has dissolved, Add a ladle of the warm mixture to your egg yolk while stirring, whisk this mixture back into the milk and sugar and remove from heat. Allow to cool to room temp before chilling in the fridge.
Once everything has chilled, combine the strawberries and milk mixture and pour into your Ice Cream maker. Process according to the manufacturer's instructions.
Place in an airtight container and freeze for a further hour and a half before serving
