Toasted Hot Cross Bun Ice Cream Sandwich

Half cup fruit cake mixed fruit 1 tsp cinnamon Half a tsp mixed spice Zest of 1 orange Juice of half an orange 1 cup of chocolate Easter egg pieces 1L vanilla ice cream
Hot cross buns (this is ideal for using up stale hot cross buns)
Scoop the vanilla ice cream into a large bowl. Add all the ingredients except the hot cross buns and stir until properly mixed through. Spoon the ice cream into a large rectangular dish lined with cling film. Place in the freezer until it hardens completely. Use a cookie cutter the same size as the hot cross buns to press out ice cream circles. Keep in the freezer until you serve.
Slice the hot cross buns in half, butter and place in a hot panini press until they are toasted and crisp. Place one hot cross bun on the bottom, then the ice cream disc in the middle. Top with another disc of hot cross bun. Tuck in right away while still warm. If you want a really oozy treat, you can also top the ice cream with some store-bought chocolate sauce before you put on the second hot cross bun disc.
