Tuna and Asparagus with lime crème

Tuna and Asparagus with lime crème

Serves 4
 Recipe by Neill Anthony

300g tuna
250g asparagus, blanched
 
Glaze:
1T oyster sauce 
1Tchilli sauce 
1T honey 
1T hoisin sauce


Crème:
200g creme fraiche 
Zest and juice of 2 limes 
2T coriander, chopped 
 
Salt 
Olive oil 
 
Season the tuna with salt and olive oil and set aside.
Mix all the glaze ingredients together and set aside
Combine all the crème ingredients together and set aside.
Over hot coals, grill the tuna and asparagus for 2 – 3 minutes until nicely charred.
Serve with a dollop of the lime crème.
