Tuna sarmies with cottage cheese

Recipe by Heleen Meyer
Serves 4

125ml (½ Cup) Smooth cottage cheese
10ml (2 tsp) Horseradish sauce
15ml (1 Tbsp) Chopped fresh Italian parsley or chives
Lemon juice, salt and freshly ground pepper to taste
Handful fresh rocket, watercress and Italian parsley leaves
8 Slices rye or wholewheat bread
1 Ripe tomato, sliced
1 x 170g tin Tuna in brine, drained
¼ Cucumber, cut into ribbons with a vegetable peeler or sliced

1. Lightly mix the cottage cheese, horseradish and herbs together. Season to taste with lemon juice, salt and pepper. Tuna is salty, so take care not to use too much salt.
2. Place salad and herb leaves on 4 slices of bread. Place tomato slices on top and divide the sauce mixture between the sandwiches. Spoon tuna on top. Add cucumber and an extra grind of black pepper. Cover with the remaining bread slices and pack in a lunch box.

1. For a kid-friendly version, leave out the horseradish and herbs. If your child prefers, pack cucumber and tomato slices separately.
2. Fresh avocado always goes well with fish – add when available.
3. Wholewheat pitas or wraps will be delicious with this filling.
4. If horseradish is not available, add some Dijon mustard to the cottage cheese instead.
