Vegan Meatballs with Clover Good Hope Soy Milk Sauce

Vegan Meatballs with Clover Good Hope Soy Milk Sauce

Vegan meatballs:
1 Tin Black beans, drained and rinsed
1 Tin Chickpeas, drained and rinsed
½ Cup Cooked brown rice
1 tsp Smoked paprika
Handful Fresh coriander, finely chopped
Salt and pepper

Place all the ingredients into a food processor and blend until well combined.
Season the mixture well with salt and pepper.
Using your hands, roll golf-sized balls of the “mince” mixture.
Preheat a sauce pan to a medium- high heat, pour 1 Tbsp of oil into the pan.
Fry off the “mince” balls in batches until golden brown, then set them aside.

Soy milk sauce:
2 Cups Clover Soy milk
2 Tbsp Flour
2 Tbsp Olive pride extra virgin olive oil
1 Tbsp Nutritional yeast

Add the flour and oil to a sauce pot and bring to a medium heat, cook the flour for 1-2 minutes until fragrant.
Using a whisk slowly pour the Clover soy milk into the pot, making sure to stir in all the flour to avoid any lumps.
Allow the sauce to thicken for 5-7 minutes. Add the nutritional yeast, stir and season well.
Add the vegan meatballs to the sauce and allow to heat through.
Serve the meat balls immediately, topped with more nutritional yeast if desired.
