Woolworths Lemon Yoghurt Loaf
1 1/2 cups self-raising flour
1 cup Ayrshire plain yoghurt (DD)
1 cup sugar
3 large free range eggs
2 lemons, zested (reserve the juice for the syrup)
1t vanilla paste or extract
1/2 cup butter melted
For the lemon syrup
1/3 cup sugar
Reserved lemon juice
For the drizzle: combine
3/4 cup icing sugar
1 lemon, zested and juiced
Add the flour to a large mixing bowl. In a separated bowl whisk together the yoghurt, sugar, eggs, lemon zest and vanilla. Pour this mixture into the flour while mixing in the butter. Pour into a greased loaf tin
In an oven preheated to 180C. Place the loaf in the oven to bake for 45 - 50 minutes or until a cake tester comes out clean after testing.
White the loaf is baking prepare the syrup by heating the sugar and reserved lemon juice together until the sugar has dissolved.
Once slightly cooled, pour the lemon syrup over and allow to soak in. Carefully remove from the loaf tine and drizzle over the lemony drizzle. Allow to cool before serving.
