Woolworths Mushroom, Leek and Parmesan Braai Pie

Woolworths Mushroom, Leek and Parmesan Braai Pie

2 x WW Ready rolled puff pastry, defrosted in the fridge overnight
4 Tbsp WW butter
2 X WW Brown mushroom steaks (8 mushrooms), torn
150 g WW Leeks, chopped
200 g WW Baby spinach
100 ml WW Double thick cream
15 g WW Fresh Italian parsley, chopped
50 g WW Italian Parmigiano Reggiano Cheese, grated
2 WW eggs, whisked

 

Panfry the mushrooms in batches over high heat in 2 T of butter. Remove from pan and set aside.
Add the rest of the butter to pan and fry the leeks over medium heat until soft and translucent.
Stir the mushrooms, spinach, cream and parsley through and cook for 2 minutes.
Unroll one sheet of pastry and place carefully on the cold braai grid. Top evenly with filling. Sprinkle the Parmigiano on top.
Unroll the second sheet of pastry and put on top of the filling. Use a fork to seal the edges.
Brush the pastry with the whisked egg on both sides, close the braai grid and braai over moderate coals for 20-30 minutes or until golden brown and done on both sides.
