Yoghurt Parfait Expresso

Yoghurt Parfait
 
Recipe by Amy Hopkins
 
2 Tbsp almonds, chopped
2 Tbsp cashews, chopped
1 Tbsp sunflower seeds
1 Tbsp pumpkin seeds
1 Tbsp flaxseeds
1 tub of yoghurt
4-5 strawberries chopped
Handful of blueberries
Handful of raspberries or gooseberries
Fresh Mint
Raw honey, for drizzling
 
1/ Place the nuts and seeds in a dry frying pander high heat and toast for 30 seconds until fragrant.
2/ Layer yoghurt with berries and nuts and seeds in a tall glass.
3/ garnish with fresh mint and a drizzle of honey.
